Since 1988, we’ve been a proud part of Borough Market.
What started as a wholesale stall selling speciality produce to restaurants has grown into a vibrant operation offering fresh, high-quality produce to all. Today, we’re known for our signature dishes, including Wild Mushroom Risotto, Chocolate Covered Strawberries, Triple Cooked Chips, and Fresh Juice.
Sustainability is at the heart of everything we do, and ss our stall grew, it became essential for us to do so in an environmentally responsible way. We began by transforming overripe produce into freshly pressed juices. These quickly became a customer favourite and so we expanded our sustainable practises further.
Our dedication to sustainability and exceptional quality means that the surplus we use often exceeds the standard many restaurants are willing to pay for.

Our surplus Wild Mushrooms and specialist produce became the foundation for our beloved spelt risotto, while leftover tomatoes and carrots from our displays were transformed into homemade ketchup and curry sauce for our signature triple-cooked chips.
This enables us to create dishes with only the finest, premium ingredients. From the Roscoff onions and Lautrec garlic in our stock to the Sugarloaf pineapples and Laudani citrus fruits in our freshly pressed juices, every dish showcases the care, attention, and excellence we put into everything we do.
In the Turnips kitchen with Keira! This week Hasselblad squash with feta and pomegranate, perfect for the season! ❤️
Recipe below!
Ingredients:
1 butternut squash
2 pomegranates
1 cup of feta cheese
150 grams butter
3 garlic cloves
2/3 cup parsley leaves
Honey to garnish
Method:
1- start by peeling your squash, cut of both top and bottom ends and half the squash. Scrape out all seeds completely.
2- Lightly drizzle olive oil and place in the over for 30mins at 200 degrees to soften the squash.
3- Finely chop the garlic and parsley then combine with your butter and a drizzle of honey.
4- Remove squash from oven allow to cool slightly and chop 2cm slices along the top edge ensuring not to fully cut all the way through – you can use utensils on either side to ensure you don’t cut through.
5- Lather the garlic and parsley butter onto the squash and ensure to get between the opens for consistent flavour.
6- Pop the squash back into the over for a further 10mins.
7- Once fully cooked and browning on the top remove from oven and garnish with pomegranate seeds, feta cheese and parsley.
8- Enjoy!
